Dinner Highs and Lows
Wednesday, January 7th, 2009Truth be told, I’ve never been much of a chef. When I do cook, I stick to things I already know (pasta, stir fry, burritos, and anything where you cut a hole in the protective film and place in the microwave for 5 minutes). Since moving to Cincinnati, my roommates have done the majority of the cooking in the house. In San Francisco, I literally never cooked at home. In Utah, I had access to my mom’s mega-pantry (not to mention Mom) so I never had to try cooking things I didn’t already know.
Tonight, I decided to try cooking butternut squash fries. I checked out a couple different recipes on the web, decided on my plan based on what was in the cabinet, and went for it…
As you can see, the first batch (on the right) didn’t turn out so well. I sliced them too thin and used a touch of brown sugar which caramelized into a sticky mess that glued them to the bottom of the pan. The second batch (on the left) used larger slices and I skipped the brown sugar and only used salt. I probably needed to leave them in a few minutes longer, but they were delicious.
Hooray, I learned how to cook a new thing!

You might like them better roasted in the oven instead of pan-frying. Cut them like Texas fries or home fries and drizzle with olive oil. Roast at 350 degrees. You could sprinkle cinnamon sugar on them too.
